3/4 cup Brown rice
1 3/4 cups Water
3/4 pound Asparagus, cut in 1 1/2" pieces
4 ounces Mushrooms, sliced (about 1 cup)
1/4 cup Green onions, chopped
1/3 cup Walnuts, chopped
1/4 cup Parsley, finely chopped
3 Tbsp. Lite soy sauce
Bring water and rice to a boil in a medium saucepan. Reduce heat and simmer, covered for 35-40minutes or until rice is tender and liquid is absorbed. While the rice is cooking, cook asparagus in a small amount of water in a large skillet for about 3 minutes. Drain any excess water; add mushrooms and green onions. Sauté, stirring constantly until asparagus and mushrooms are just tender, about 3 minutes. Add vegetable mixture to cooked rice. Stir in parsley, walnuts and soy sauce. Serve immediately or reheat carefully on low heat, stirring often.
