This tasty vegetable soup is chock full of vegetables. One serving will count for 2 vegetables toward your count of "5 A Day" of fruits and vegetables, which is recommended for a healthy diet and as a way of reducing your risk of cancer. Also homemade soup can be made with less salt (sodium) than commercial products. Although this soup has a moderate amount of sodium, approximately 300mg, it is still 1/5 to 1/4 the amount found in the same amount of a regular commercial or canned soup.
Ingredients:
1 large beef shank with bone
2 28 oz. cans of diced tomatoes
1 large onion, chopped
1/3 regular sized cabbage, chopped (approx. 5 -6 cups)
1 cup carrots, sliced
1 cup corn (either frozen or cut off the cob)
1 cup celery, sliced
1 cup fresh green beans, chopped into 1-inch pieces
2 beef bouillon cubes
1 pound of uncooked pasta (whatever type you like, but not spaghetti)
In a large soup pot place beef shank and cover with all of the diced tomatoes. Simmer for approximately 20 minutes or until beef is nearly cooked and starts pulling away from the bone. Add approximately 7 cups of water. Add cabbage, onion and bouillon; simmer for 30 minutes. Remove beef and place on plate or cutting board. Cut beef into small pieces, being careful to cut away and eliminate all fat. Add the meat to the soup mixture and also throw the bone back in to help further flavor the soup. Add remaining vegetables. Simmer for at least two hours, or until vegetables are somewhat soft. Remove bone and give to dog.

Soup makes approximately 16 portions of 1 1/8 cups each. Before serving, portion out the number of soup servings needed. *Add approximately 1/2 cup of cooked pasta (1 oz raw pasta) for each portion of soup being served. {Do not mix pasta with entire large pot of soup (unless you are using it all at once) or they will soften and break up}.
This recipe provides 16 generous servings, each serving size being more than 1 1/2 cups for soup with pasta added.
